Hemp & Hope – Prototyping the Future of Climate-Resilient Food
Hemp & Hope is a four-part future-prototype developed to explore hemp as a climate-resilient superfood. Together with Fotografiska, we supplied premium hemp ingredients for a series of experimental dining experiences, an AR-powered “Superfood Label” of the future, and a dedicated special-issue magazine.
The project transformed Fotografiska’s culinary team into strong advocates for hemp, showcasing its versatility and performance in modern cuisine. It also sparked new connections between chefs, producers, innovators, and sustainability leaders—strengthening the Swedish hemp network and raising awareness of hemp’s role in future food systems.

Fotografiska × Hemisphere — From Prototype to Everyday Use
After the Hemp & Hope project, Fotografiska integrated Hemisphere’s ingredients directly into their kitchen. Today, they use our hemp seed oil across dishes for its clean, nutty profile, and our hemp seeds in pastries as a sustainable alternative to almonds.
This shift supports Fotografiska’s ambition to reduce ingredients with high environmental footprints. Almonds require extremely water-intensive cultivation—often over 12,000 liters of water per kilo—while hemp grows with a fraction of the water, thrives without pesticides, and regenerates soil.
By replacing almonds with Swedish-grown hemp, Fotografiska reduces water use, strengthens local agriculture, and elevates flavor and nutrition in the process.

Sodexo × Hemisphere — A Popular, Low-Impact Lunch Hero
Sodexo, one of the world’s largest foodservice providers, serves millions of meals daily across workplaces, schools, hospitals, and universities. As part of their shift toward more sustainable menus, they partnered with Hemisphere to introduce our hemp-based kebab into their Swedish lunch restaurants.
The results have been remarkable: every time the hemp kebab is served, it becomes the most selected dish of the day—outperforming both plant-based and traditional alternatives. Chefs highlight its clean flavor, versatility, and high protein content, while sustainability teams value its ultra-low climate footprint compared to conventional meat and many imported plant proteins.
By choosing Swedish-grown hemp, Sodexo reduces emissions, supports local agriculture, and shows how climate-smart proteins can be both delicious and mainstream.

Swedish Hemp Bread — Elevating Everyday Baking
Hemisphere collaborates with leading bakeries to reimagine one of the most familiar food products of all: the classic bread roll. Through a structured recipe comparison, we explored how Swedish-grown hemp ingredients can enhance nutrition, functionality, and culinary experience in modern baking.
The project evaluated three versions of the same roll:
- a classic wheat roll,
- a roll enriched with 20% Hemp_PRO_2000 protein flour, and
- a premium variant with 20% hemp protein + 10% Hemp_CRUNCH_1000 for added texture and nutrients.
According to the recipe and analysis provided, the hemp-enriched rolls delivered significant improvements without sacrificing softness or flavor.
- Protein content nearly doubled, rising from 8.5 g to 15–16 g.
- Healthy fats and fiber increased, thanks to hemp’s natural omegas and seeds.
- Texture, moisture, and flavor improved, particularly in the variant with Hemp_CRUNCH_1000.
For bakeries, this creates a new category: a functional, clean-label, nutrient-dense bread using Swedish organic hemp—free from allergens, additives, and off-flavors.
The result is a premium, everyday product: familiar in form, but better for consumers and better for the planet.

Axfoundation × Hemisphere — Developing the Next-Generation 50/50 Meatball
Axfoundation, through its test farm Torsåker gård, is one of Sweden’s leading innovation hubs for sustainable food. The site brings together chefs, scientists, farmers, and food companies to develop practical solutions for a more resilient food system. As part of their work on future proteins, Axfoundation and Axfood have highlighted hemp as a promising Swedish crop with strong environmental potential.
Hemisphere was selected to collaborate on a multi-day development sprint at Torsåker. The goal: to create an optimal 50/50 meatball made from 50% beef and 50% hemp-based emulsion (protein, oil, water).
Working in Torsåker’s professional test kitchen, the team refined texture, juiciness, and flavor to achieve a hybrid meatball with significantly lower climate impact while maintaining the taste and feel of a traditional Swedish köttbulle.
A practical demonstration of how Swedish hemp can help reduce emissions in everyday foods — without compromising culinary quality.

Boom Food × Hemisphere — Proving Hemp in Real Plant-Based Products
Boom Food is Hemisphere’s own energetic, consumer-facing brand created as a test bed for hemp-based food innovation. The goal is simple: to show the food industry that Swedish hemp is not just sustainable, but also ideal for high-quality plant-based products.
Through Boom Food, we’ve developed hemp-based sausages, kebabs, and other formats that demonstrate excellent taste, texture, and nutrition. The brand has become a practical proof of concept, showing chefs, retailers, and manufacturers what hemp can achieve in the real world.

Recipe Application: Protein-Enriched Bread Roll with 20% Hemp Protein
Ingredients (approx. 10 rolls)
480 g high-protein wheat flour
120 g hemp protein (65%)
380 ml lukewarm water
25 g fresh yeast
30 g rapeseed oil
15 g honey or syrup
10 g salt
Method
Dissolve the yeast in the lukewarm water.
Add flour, hemp protein, and the remaining ingredients.
Knead for at least 12 minutes (the hemp protein requires extended kneading).
Allow the dough to proof for 60–70 minutes.
Shape into rolls and proof for an additional 40 minutes.
Bake at 225°C (437°F) for 12–14 minutes.
